Gwail Yachae Salad — Fruit and Vegetable Salad

Tomatoes, yams, strawberries and celery: they may all hang out in the produce section of the grocery store, but few have ever thought of forcing them to be mixed and eaten together. Ahh, the wonders of mayonnaise, that tangy dressing that magically creates concoctions like gwail yachae salad — a sister dish of the famous Waldorf Salad. Providing your daily serving of fruits and vegetables at the same time, gwail yachae salad packs a punch with its crunchy ingredients, but also happens to have enough berries and melon to show it’s got a softer side.

INGREDIENTS

• 25 cherry tomatoes

• 1/2 cup apple, peeled, cored and diced (25 pieces)

• 1/2 cantaloupe, diced (50 pieces)

• 2 celery stalks, diced (50 pieces)

• 1 large yam, cooked, peeled and diced

• 2 tablespoons sliced almond

• 2 tablespoons pine nuts

• 50 small strawberries, quartered

• 8 leaves of leaf lettuce

Dressing:

• 3 tablespoons mayonnaise

• 4 tablespoons Japanese mayonnaise*

• 2 tablespoons pina colada drink mix

DIRECTIONS

Mix the dressing ingredients and set aside. Prepare all the ingredients, except the strawberries and lettuce, in a large bowl and gently toss with the salad dressing, adding strawberries for the final toss. Line a serving platter with lettuce and arrange the salad on top. Serve immediately. Serves six.

Note: Any kind of less juicy fruits can be added such as grapes, canned mandarin oranges, pineapples, etc.
